How can I disable the floating scroll and zoom icons in the lower right of the display?

It's a bug (regression) on the older iOS versions. They are not needed in Landscape mode ever on any iPad, but we've focused all of our testing and fixing on iOS 12, where everything should work.

They are useful on iPad when using MidiDesigner in SlideOver or Splitscreen mode. Are these gone in iOS 12?
Not at all! On iOS 12 we’re able to detect split screen, slide over, and portrait mode. If you’re not in one of those, and you’re not on an 11 inch iPad, then the icons will hide.
Aha. Good stuff! Yet to head over to 12, but good to know. :)
You should. iOS 12 is the only no-brainer update in the history of iOS. Makes all devices faster and that. It’s great. While it’s absolutely destroyed their revenue stream for the moment — no forced upgrades— Apple knows those people are still users and will upgrade some day. But I digress.
